My girls have been back to school for about a month now and we have some really busy days and evenings. My oldest is attending the University here but only has in-person classes every other week and zoom classes on the other weeks.  It’s been really nice having her home with me since everyone else is off to school all day.  Because my little one is in Kindergarten she only goes for 2.5 hours and is back. It’s nice to have the two of them here together and getting in some bonding time.

They love having lunch together and if we can make it a picnic we definitely will do that for as long as the weather permits. Having Gortons fish sandwich filets on hand in my freezer is always nice because they are delicious.  One of our go-to menu items for busy days and evenings is a fish sandwich.  We get a delicious bun, spread it with some garlic butter and get it nice and toasty.  We usually add lettuce and tomato and some homemade tartar sauce.

Tartar sauce is so simple to make and that little kick of tang is just what this sandwich needs. Although you can totally just make the sandwich on it’s own without a sauce because the fish filets are great.

So whatever you do this fall make sure you grab some of these for your freezer and make these for lunches or dinner. It makes cooking with seafood easier than ever, even your kiddos can do this.

Don’t forget to save the recipe to your Pinterest boards.
