Easy to make summer salad with honey bbq dressing and topped with Alpha Foods Crispy Chicken Patties.

I can’t even tell you how happy I am that summer is finally here. I love nothing more than having family meals outside. Today I am sharing a summer salad that is perfect as a side or a meal for lunch or dinner. I made this one with Crispy Chik’n Patties by Alpha Foods, you can get them at Costco in the Northwest and select stores in Southeast, LA, Texas, Hawaii and Puerto Rico.
They are plant-based, delicious and can be made so many ways. When I made this for dinner the other night my daughters didn’t even know they were plant-based. They loved them and thought they were actually better than some of the real chicken products we have had. So that’s a win!

Crispy Chicken Summer Salad
Instructions
CHICKEN: Start by preparing according to package directions. Let cool to warm and then slice.
SALAD: To a large bowl or platter add lettuce. Top with halved cherry tomatoes, thinly sliced cucumbers, sliced red onions, and sliced avocado to the bowl OR to individual plates. Add the sliced chicken on top. Drizzle with the dressing, toss to combine, and serve immediately!
DRESSING: Whisk the ingredients for the dressing along with a big pinch of salt and black pepper. Whisk until smooth. If not using immediately, transfer to a mason jar and store in the fridge. (Leftovers stay good for 5-7 days).
STORAGE: Dressed salad doesn't sit well, if you want to have leftovers or make ahead, store the dressing separately from the salad.
