Delicious cheesy chicken and broccoli casserole combines simple flavors that bring
comfort to the table.
I hope you’re all hanging in there. This is a crazy time for everyone. I’ll try to get as many recipes on here as I can so you have some new recipes to try while at home. This casserole is so good and my family loves when we have it for dinner. I usually serve it with Rice-A-Roni chicken flavor, and a salad or fruit.
It is comfort food for sure. I used a rotisserie chicken because it’s so much easier when in a hurry, but you can also use cooked chicken breasts if you’d like. I hope you enjoy it and stay safe out there.

- 6 eggs well beaten
- 1 16 ounce carton cottage cheese
- 4 cups sharp cheddar cheese grated
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2 cup flour
- 2 cups chopped broccoli florets fresh or frozen (thawed)
- 2 cups rotisserie chicken shredded or cut into small pieces

- Heat oven to 350F degrees. Spray baking dish with cooking spray.
- In a large bowl, add 6 eggs beat well with a whisk. Add the cottage cheese, cheddar cheese, salt, pepper and the flour, stir until well blended.Stir in the broccoli and the chicken.
- Pour mixture into the prepared pan; spread evenly. Bake for 45 to 50 minutes or until set.
I like to serve this with Rice-A-Roni chicken rice, salad, and fruit.
