White Chocolate Apple ‘Donuts’

Delicious, crunchy, apple ‘donuts’ are a fun and healthy option for an after school snack.  Top with your favorite fruit toppings.

All of my older girls are in school now.  My homeschool days are over for a while now.  I am doing a little bit of preschool with the little one, but she also started preschool at our neighbors home.  I will be team teaching with her on Thursdays, so she is away at school once a week.  It feels a little strange to not have a school schedule each day after doing it for the past five years.  I am struggling a little bit and just hoping and praying that I did enough as a homeschool mom with my 7th grader who hasn’t been to public school for the past five years.  She has been coming home after school happy and is doing well so far with her work, but I know that she is a good student and will doing amazing but it is odd to not have her home all day with me.  I miss her and all my other girls when they are gone.

Because they are gone most of the day and my sophomore is gone until 6:00/6:30 PM each night because she plays volleyball, I like to use the time we have doing productive things and making those hours count until it’s time for bed. When they get home from school I like to have some sort of a snack ready for them if possible so they don’t run to the pantry for chips or cookies.  These apple ‘donuts’ are a fun snack, easy to make and easy to customize.

I use Philadelphia Cream cheese, white chocolate pudding, and vanilla yogurt.  Mix those ingredients up and core and slice your apples, dice up your favorite fruit, sprinkle on some granola and top onto the apples. Fun, delicious, and beautiful!

Instructions
  1. n a medium bowl using whisk attachment or hand beaters, mix together the cream cheese and pudding mix until well combined.
  2. Add yogurt, mix until smooth.
  3. Top apples with cream cheese mixture and top with fresh fruit and granola.
