Garlic Butter Asparagus Orzo

A 20-minute dish that is buttery, delicious and a perfect side or main dish.

What a month this has been! Lots of sickness at our house, lots of busy nights and lots of dad or girls cooking when I was sick.  One thing I love to have on hand are yummy, simple recipies that anyone can make.  This is one of those recipes and it only takes 20 minutes.  We have served this as a side dish as well as a main dish.  Serve with some garlic cheese bread and a nice salad and you have yourself a delicious meal.  Garlic Butter Asparagus Orzo with lemon.  It delicious!

Garlic Butter Asparagus Orzo
  1. Prepare orzo according to the directions on the package.
  2. Add the asparagus tips to the orzo the last 2-minutes of cooking.
  3. Remove from heat and drain.
  4. While pasta is cooking prepare the garlic-butter sauce.
  5. Add butter to a skillet and melt over medium heat.Stir in garlic and cook for 4 to 5 minutes, or until lightly browned, stirring very frequently. Do not burn the garlic.
  6. Add orzo and asparagus to the skillet; stir in the cheese, milk, parsley,lemon juice, salt and pepper.
  7. Cook for 1 minute, or until heated through and garnish with parmesan cheese and extra parsley. Serve.
