I really cannot believe that it is 2019.  Next year I will have a high school graduate and it just blows me away because I remember when she was born and we said that she would graduate in 2020 and now it is  just around the corner.  But before we get too ahead of ourselves I will just take one day at a time in 2019.  I don’t really like to make resolutions, I like to make mini goals because it just makes more sense to me and doesn’t freak me out as much.  Little goals each week or month are much more doable than making a huge resolution for the year.  Know what I mean? One goal that I am trying to work on for this month is to make and take the time to have breakfast and to have my daughters a decent breakfast before they start the day.  One thing that is easy are overnight oats and these peanut butter banana chocolae chip chia overnight oats are a great option.

Overnight oats are so delicious and easy to make ahead of time.  The oats are not cooked but instead they’re combined with liquid, sweetener, and anything else you want to add to them, and they soften in the refrigerator overnight. They become creamy and delicious and I usually like to add chia seeds to my oats but it is totallly optional.  You can eat overnight oats when they are cold right out of the fridge or pop a bowl of them in the microwave for 30-45 seconds and warm them up if you’d like.

I like to put them in little mason jars so they are easy to pull out of the fridge and reheat or eat on the go. I did layer the peanut butter and bananas for photos but you don’t have to do that, just make the recipe as is and fill your jars or bowls.
