Soft and Chewy Caramel Popcorn

The most delicious soft and chewy caramel popcorn you’ll ever make.

Soft and chewy caramel popcorn always calls my name during this time of year.  I have so many fond memories of my mom making this popcorn for the holidays.  Back when I was in elementary you could still take homemade treats to class parties and on Halloween parties my mom would always make a batch of this for my classes.  We would roll them into popcorn balls and pass them out.  They were always so ooey and gooey and just a favorite treat for all of us.

It is a recipe that is easy to make and if you want it more caramel-y you just add less popcorn.  You can also add nuts to this, I am not a fan of the nuts but my dad sure likes us to add in a bit of salted peanuts to the mixture.

Instructions
  1. Place the popcorn in a large bowl. You'll be tossing the popcorn in caramel so make sure your bowl is big enough or split popcorn into two large bowls and divide caramel to make it easier).
  2. In a medium saucepan, add the brown sugar, butter, corn syrup and salt. Heat the ingredients over medium-low until the butter is melted and the ingredients are combined. Increase the heat to medium and bring the mixture to a simmer, stirring often.
  3. Cook for 3-4 minutes, stirring constantly.
  4. Turn off the heat and quickly whisk in the baking soda and vanilla (the mixture will foam and bubble).
  5. Immediately pour the caramel over the popcorn in a slow steady drizzle, tossing the popcorn to evenly coat in the caramel mixture. The caramel will set up and harden a bit as it cools so mix quickly.
  6. Serve immediately or within a couple hours
