Peanut Butter Crunch Brownies

Take your brownie to the next level. Peanut Butter Crunch Brownies are fudgy, full of peanut butter and chocolate and an added crunch.

I am so overwhelmed with things that I can’t even think of anything fun or witty to share about.  So instead I will just share chocolate because chocolate always makes things better, right?! Especially when the chocolate is in the form of Peanut Butter Crunch Brownies.

I don’t know if any of you start feeling overwhelmed with daily tasks and feel mom guilt, wife guilt and more.  It’s an annoying place to be in and I am not usually like this, so I don’t know why I am even writing about it.  Maybe because that’s just how life goes and I want to be as real as possible.  Life is crazy at time.  Life is sometimes sucky.  But it’s ok.  It goes on and so can we.  Baby steps and chocolate.

I made these the other day and took them to Sunday dinner.  We love brownies at our house and figured we jazz them up with some peanut butter and chocolate and why not throw some rice krispies on top for good measure.  They are good but oh, boy are they rich.  They are one of those desserts that you can just have a small piece of, which I did everyday for a few days.  Give them a try.  They are a treat for sure.

Peanut Butter Crunch Brownies

  1. Heat oven to 350 degrees F. Spray a 9x13 inch baking dish with cooking spray or line with parchment paper
  2. Add the butter and chocolate to a medium microwave safe mixing bowl. Microwave on 30 second intervals, stirring after each interval, until melted and smooth. Add in the sugar, vanilla, and eggs to chocolate mixture and mix until smooth. . Stir in the cocoa powder, flour, and salt until just combined. Batter will be thick.
  3. Pour the batter into the prepared pan, spread out into an even layer.
  4. Place in oven and bake for 18-20 minutes, or until the brownies are set. I like to test with a toothpick. Remove from the oven and allow to cool.
  5. In a small bowl, beat together the peanut butter and 2 tablespoons softened butter until smooth and creamy. Dollop tablespoon size spoonfuls of the peanut butter over the brownies. Transfer to the freezer and freeze 10 minutes.
  6. Melt the chocolate chips in the microwave. Sprinkle the Rice Krispies over the peanut butter and then pour the melted chocolate over top. Place the brownies in the fridge to set, about 15-20 minutes. Cut the brownies into squares. Store in the fridge.
