Pancake Muffins

Delicious pancake muffins baked in the oven and topped with your favorite toppings are perfect for breakfast on-the-go.

Early mornings.  I do not like them.  I can most definitely say that I am NOT a morning person.  If I could sleep until 9:00-10:00AM everyday I would. But mornings can be busy at our house with my hubby going to the gym, he is a nut and wakes up at 4:15AM to be to the gym by 5:00AM.  I think that’s crazy sauce. Then he gets home and gets ready for work and my older girls wake up and get ready for school.  They all head out way to early for my liking.  Sometimes they are rushing for breakfast and sometimes they even skip breakfast (which I hate). So when we make a batch (or three) of these pancake muffins it makes life much easier.

Just use your favorite pancake mix (homemade or store-bought). Top with your favorite toppings and bake in the oven at 350 for 9-11 minutes or until a toothpick comes out clean.  If you are freezing them like we do, just take one or two out of the bag and pop in your microwave for 45 seconds or so to warm up.  Problem solved for no time to eat breakfast because they can eat it on the go.  If they have a few extra minutes they like to dip them in syrup, but sometimes that is hard when you’re on the go.

My younger girls and I are lucky and are usually never on-the-go in the mornings. Perks of homeschool life. We don’t start school until 10:00AM so we have all the time we want to dip in syrup.

Instructions
  1. Preheat oven to 350. Mix together pancake batter according to instructions.
  2. Spray muffin tin pan with nonstick spray or use muffin liners. Fill ⅔ way full. Top with 1 tablespoon of mix-ins per muffin or keep plain.
  3. Bake for 9-11 minutes or until a toothpick comes out clean

      We are 1PM church now and as much as I’m not a morning person, I’d rather have 9AM…LOL
